When I had my third baby girl, my sweet precious neighbor sent me a breakfast casserole and it forever changed my life! I normally cook a big breakfast every single day for my kids but every once in a while I remember this life saving hack. Make a casserole and get a few days of slow mornings without sacrificing a good hardy meal. So without adding too much fluff to this blog let’s get straight to it-the recipe! 

Let me also say, I’m not a person that measures. I wing it and it never fails. The more you cook the more you just know!

What you need: 

*casserole dish or aluminum roasting pan about 9x13

*spray or butter for pan so it doesn’t stick.

*8 hash brown patties

*season salt 

*1 package of diced ham

*cheddar cheese (grate it)

*9 eggs

*foil to cover while baking

STEPS:

  1. Preheat oven to 375*
  2. Grease pan
  3. Line bottom with 8 hash brown patties
  4. Dump package of diced ham
  5. Layer as much cheese as you’d like. (I love cheese so I do quite a bit. Maybe half of a pound block)
  6. Crack 9 eggs in a bowl, add season salt and beat them
  7. Pour eggs over the top
  8. Cover with foil and bake for 30 minutes
  9. Take foil off and bake for another 20 minutes
  10. It’s ready to eat or throw in the fridge for the next morning!

I like to serve with a side of fruit. The whole family loves it! I hope this buys you a few peaceful slow mornings. Enjoy that coffee, mama!
